Chef Andrew Humbert

Executive Chef and Director of Food Services
Andrew Humbert, a 40 year veteran of the food service industry, has spent the last 13 years as executive chef and director of food services for the Studio Operations group at Universal Studios. During this time he has catered many high profile events such as after parties for the Grammys and other movie premiere events. On a daily basis, he is responsible for the operation of the studio’s commissary (Studio Café), executive dining room (Universal Grill), the Back Lot café and lower lot catering.
Before joining the Universal family, Humbert was a corporate chef for one of New York’s largest restaurant groups, Ark Restaurants, where he worked with Executive Chef Jonathan Waxman, overseeing the company’s operations in New York, Washington DC and California. While with Ark he was instrumental in opening some of their largest and most profitable properties including Bryant Park Grill in New York City and the food court and surrounding restaurants at New York New York Casino in Las Vegas. He also catered some very large events such as MTV’S Music Video Awards and President Clinton’s birthday party.
Prior to working for Ark, Humbert was the executive chef for Chef Paul Prudhomme both in New Orleans and New York City at K-Pauls Louisiana Kitchen. While with K-Pauls he traveled extensively both nationally and internationally consulting on Louisiana regional foods. He assisted in the openings of restaurants in France, Mexico City and Puerto Rico. In 1994, Humbert traveled to Frankfort Germany with a group of chefs from Louisiana to offer support and cater the after party for the United States Culinary Team at the Culinary Olympics.
Humbert started his culinary career in a small town outside of Ohio, where he often participated in regional BBQ cook-offs, winning several prizes and awards.
